Okumidori Kabusecha (Shaded Sencha) 2019
This batch is from the Nakai family’s garden in Kyoto, the heartland of Japanese tea farming. Nakai-san is a 7th generation tea grower, and his garden pioneers organic and natural agriculture.
Kabusecha is a tea which ranks above sencha in Japanese teas. Kabusecha is only grown in the spring season, under the shade. You can see the plants being covered in the picture. Shading the tea plants increases the umami in the tea, giving kabusecha its characteristic Japanese umami. This batch was picked on the 12th May after shading. The steaming (which keeps the tea green) was a quick 20s.
Like wine, tea has varietals. This tea is a pure Okumidori varietal, which gives it a silky smooth texture. On the palate the tea has hints of kombu, kale and spring greens. The short steaming gives it an excellent precision of flavour. The finish is impressively long with excellent umami. If you love Japanese flavours, you will love this tea.
